Holiday wine pairings with a spicy Sri Lankan twist

Toni Bulloni Resturant’s Siva shares his ideas for Wine pairing with Sri Lankan food. At a tasting recently, Siva was asked to pair some of France’s newest wines with our diversified and varied Sri Lankan menu. Here are some of his favourites with his suggested matches.

“Here are two of my favourites. These are organic wines and match perfectly with our fresh ingredients and spices.”

O Chardonnay

This O organic wine is an excellent choice for our spicy foods. Our dishes are made with masala, curry powder, spices, herbs and garlic. Therefore, the acidity of the O chardonnay is ideal for our meals. If you enjoy our curries with more coconut milk, the chardonnay is a great choice. White curries with the creamy ˜avour of coconut milk can be paired with this wine.

O Pinot Noir

In our business, we call it the “cross-table” wine. This wine is easy going, pairing well with most meals. Remember, not all your meals will be formal this holiday season; you will ÿnd occasions when you need to pair a wine the snack or appetizer. From kothu roti, parathas, hoppers, naan, rolls, cutlets, the O pinot noir is a versatile wine.

Gassac C Chardonnay

Chardonnay is the choice for seafood, if you plan on serving any of our spicy seafood dishes, including fish or cuttlefish dishes, this wine will be ideal for you. If you’re hosting vegetarians, this wine goes well with spicy green dishes and salads.

Gassac M Merlot

This wine goes well with most of our curry style dishes or even a spicy appetizer. Ideal to serve alongside our meat curries chicken, beef, lamb or pork. Mutton curry is a favourite among many Sri Lank-ans and M Merlot pairs well with ‘bites’, dry deviled meat dishes.
